I read your similar post from Louis Loves Food quite a while back, and I love cooking eggs like this now.
I'm not a breakfast person, but I'll fry up two eggs in olive oil, place them over a bowl of al dente pasta, shave some good Parmesan over it, sprinkle a good amount of sea salt... amazing, quick, and healthy dinner.
